ingredients needed

  • 1 large russet potato
  • 2 tbsp non-fat Greek yogurt
  • 2 strips turkey bacon, cooked and crumbled
  • 2 tbsp low-fat shredded cheddar cheese
  • 1 tbsp fresh chives, chopped
  • Salt and cracked black pepper
  • 1 tsp olive oil

  • Preheat oven to 400u00b0F.
  • Scrub potato, dry it, and rub with olive oil. Pierce 8-10 times with a fork.
  • Season skin with salt. Place directly on oven rack.
  • Bake 50-60 minutes until skin is crispy and inside is fluffy.
  • Meanwhile, cook turkey bacon until crispy. Cool and crumble.
  • Split potato open and fluff the inside with a fork.
  • Top with Greek yogurt, shredded cheese, and crumbled turkey bacon.
  • Finish with fresh chives and cracked black pepper.
