ingredients needed

  • 1 lb purple potatoes, halved
  • 1/4 red onion, thinly sliced
  • 2 hard-boiled eggs, sliced
  • 1/4 cup fresh cilantro, roughly chopped
  • 2 tbsp aji amarillo paste (found at Latin grocery stores)
  • 2 tbsp mayonnaise or Greek yogurt
  • 1 tbsp lime juice
  • Salt and pepper to taste

  • Boil purple potatoes in salted water 15 minutes until tender. Drain and cool.
  • Whisk together aji amarillo paste, mayonnaise, and lime juice until smooth.
  • Soak red onion in cold water 5 minutes to mellow the bite, then drain.
  • Combine cooled potatoes, red onion, and half the cilantro in a bowl.
  • Fold in the aji amarillo dressing gently.
  • Season with salt and pepper.
  • Top with sliced hard-boiled eggs and remaining cilantro.
  • Serve chilled alongside OTS Grilled Salmon or Steak.
