ingredients needed

  • 1.5 lbs Yukon Gold potatoes, peeled and cubed
  • 3 tbsp unsalted butter
  • 1/2 cup warm whole milk or half-and-half
  • 1 tsp white truffle oil
  • Salt and white pepper to taste
  • Fresh chives, finely chopped, for garnish

  • Boil potatoes in salted water 15-18 minutes until fork-tender.
  • Drain thoroughly and return to the warm pot for 1 minute to steam dry.
  • Add butter and mash until butter is fully melted in.
  • Pour in warm milk gradually, mashing and stirring until silky smooth.
  • Drizzle truffle oil over the top and fold in gently u2014 don't over-mix.
  • Season with salt and white pepper.
  • Plate in a bowl, make a well in the center, top with fresh chives, and serve alongside OTS Strip Loin or Grilled Salmon.
