  • 4 cups seedless watermelon, cubed
  • 1/2 cup crumbled feta cheese
  • 1 cup baby arugula
  • 1/4 cup fresh mint leaves
  • Juice of 1 lime
  • 1 tbsp olive oil
  • Cracked black pepper to taste

directions

  • Cube the watermelon and place in a wide serving bowl.
  • Add arugula and fresh mint leaves.
  • Crumble feta over the top.
  • Whisk lime juice and olive oil together, then drizzle over the salad.
  • Finish with cracked black pepper.
  • Toss gently just before serving u2014 don't prep more than 30 minutes ahead or it gets watery.
